minced garlic |

1 (14oz / 398ml) can |
crushed tomatoes |

1 cup |
low sodium chicken broth (or vegetable or beef) |

1 teaspoon |
salt |
|
½ teaspoon |
paprika |
|
½ teaspoon |
cumin |
|
¼ teaspoon |
pepper |
|
1 cup |
shredded mozzarella cheese |
INSTRUCTIONS
Step 1: In a large skillet, brown ground beef over medium heat, about 4-5 minutes. Add onion, red pepper, green pepper and garlic and cook over medium heat until softened, about 3-4 minutes. |
Step 2: Stir in tomatoes, broth, salt, paprika, cumin and pepper and bring to a simmer over medium-high heat. |
Step 3: Stir in rice, cover, and remove from heat. Let sit for 5 minutes until rice is cooked through.
Sprinkle with cheese, cover and let sit for 2-3 minutes until cheese is melted. Serve. |
