10 Minute Broccoli Cheese and Rice Soup
- 2 cups Minute Rice® Quick Cook Long Grain White
- 3 cups milk
- 1 can (10.75 oz) condensed cream of mushroom soup
- 1 pkg (10 oz) frozen chopped broccoli, thawed and drained
- 1 lb (4 cups) shredded Cheddar cheese, divided
Prepare rice according to package directions.
Combine milk, soup and broccoli in a medium saucepan.
Stir to combine and bring to a simmer over medium heat.
Add 3 cups of cheese and stir until melted. Remove from heat and stir in rice. Top with remaining cheese.
