15 Minute Pineapple Orange Chicken
Measure reserved pineapple juice and add enough water to make 2 cups of liquid.
Prepare rice according to package directions using the pineapple juice and water mixture.
Season the chicken with salt, then coat with flour.
Heat oil in a large pan or wok over medium-high heat and cook chicken for 5 to 7 minutes or until the edges are golden brown.
Add pineapple chunks, bell pepper and snap peas. Sauté for 3-5 minutes, until vegetables are slightly softened.
Add sweet and sour sauce, soy sauce, orange zest, orange juice and crushed red pepper flakes (if using) to the pan. Stir and cook for 3 minutes or until the sauce begins to boil.
Serve over brown rice topped with cashews and green onions, if using.
