5 Minute Classic Rice Salad
- 2 cups Minute Rice® Quick Cook Long Grain White
- 1/2 cup mayonnaise
- 1/2 cup chopped onion
- 1/2 cup sweet pickle relish
- 1/4 cup chopped pimientos
- 2 hard-boiled eggs, quartered
- 2 tsp prepared yellow mustard
- 1/2 tsp salt
- lettuce leaves (optional)
Prepare rice according to package directions.
Mix all ingredients in a large bowl.
Transfer to the refrigerator and allow to chill.
Serve on washed lettuce leaves, if using.

If you want to add more protein to each serving, add a can of tuna or salmon or add an extra hard-boiled egg or two to this dish. If you want a dairy-free option, you can also try this recipe using mashed avocado instead of mayonnaise.
