If you’re looking for a tasty dessert to round off your next family gathering, learn how to make this Baked Rice Pudding with Minute Rice® Instant White Rice.
Step 1
Preheat oven to 190°C.
Step 2
Mix the milk, rice, raisins and sugar in a medium saucepan. Bring to a boil over medium heat, stirring frequently. Reduce heat and simmer, uncovered, for 10 minutes, stirring occasionally.
Step 3
Whisk eggs, vanilla and nutmeg in a 1 1/2-quart baking dish. Slowly stir in hot rice mixture; mix well.
Step 4
Place the baking dish into a larger oven-safe container; Pour enough boiling tap water into the dish to reach 1/3 up the side of the baking dish. Be careful not to let any water spill into the rice pudding.
Step 5
Bake for 20-30 minutes until the top of the pudding is lightly browned around the edges and the centre is set when lightly touched.
Step 6
Allow to cool and garnish with almonds, mint leaves and whipped topping, if using.
Recipe Tip
If you decide not to include raisins in this dish, decrease the milk to only 2 1/2 cups and increase the sugar to 1/2 a cup.
Feel free to use nutmeg instead of cinnamon.
