3 Minute Easy Cheesy Rice Omelette
- 1 cup Minute Rice® White Cups
- 2 eggs
- 1/4 cup shredded Cheddar cheese
- 2 tbsp salsa
Heat rice according to package directions.
Beat eggs lightly and stir into rice. Pour mixture into a buttered, microwave-safe pie dish.
Microwave on High for 2-3 minutes, or until no liquid remains.
Immediately sprinkle the omelet with the Cheddar cheese. Fold the omelet in half and top with salsa.
