WHAT YOU'LL NEED

Minute Rice® instant white rice, uncooked | ||
3 cups (750 mL) | ||
1 cup (250 mL) | each: chopped onion, green pepper and celery | |
1 lb (500 g) | spicy sausage (chorizo, andouille or Italian), cut into small chunks | |
1 tsp (5 mL) | oil | |
2 cans (19 fl oz/540 mL each) | stewed tomatoes, undrained | |
1½ cups (375 mL) | water | |
2 cups (500 mL) | chopped cooked turkey | |
1 tbsp (15 mL) | Cajun seasoning |
INSTRUCTIONS
Step 1: Mix onion, pepper, celery, sausage and oil in a large saucepan; cook on medium-high heat for 5 minutes or until sausage is cooked through, stirring frequently
Step 2: Add tomatoes, water, turkey and seasoning; mix well. Bring to boil
Step 3: Stir in rice. Reduce heat to low; cover. Simmer for 5 minutes. Remove from heat. Let stand, covered, for 5 minutes. Mix lightly before serving
