WHAT YOU'LL NEED

Minute Rice Instant Whole Grain Brown Rice | ||
2 cups (500 mL) | ||
1 1/4 cups (300 mL) | Water | |
3/4 cup (175 mL) | prepared Italian vinaigrette, divided | |
2 cups (500 mL) | trimmed and chopped green beans | |
2 cans (170 g each) | light chunk tuna, drained | |
1 cup (250 mL) | grape tomatoes, halved | |
1/2 cup (125 mL) | chopped red onion | |
1/2 cup (125 mL) | sliced black olives |
INSTRUCTIONS

Step 1: Combine water and 1/2 cup (125 mL) vinaigrette in a medium saucepan; bring to a boil. Stir in rice. Reduce heat, cover and simmer for 10 minutes. Remove from heat; stir in green beans. Let stand for 5 minutes or until all the liquid is absorbed. Spread onto a baking tray; cool completely
Step 2: Toss rice and beans with tuna, tomatoes, onion and olives. Stir in the remaining vinaigrette. Serve immediately or store, tightly covered, in the refrigerator for up to 2 days. ,
Tip: Preparing the rice with broth or salad dressing, instead of water, infuses delicious flavour into every grain.
