WHAT YOU'LL NEED

Minute Rice® Instant White Rice | ||
2 cups (500 mL) | ||
1 tbsp (15 mL) | vegetable oil | |
1 lb (500 g) | lean beef stir-fry strips | |
1 ½ cups (375 mL) | each water and mild salsa | |
1 pkg (35 g) | taco seasoning mix | |
8 | small flour tortillas, warmed | |
1 cup (250 mL) | shredded Cheddar cheese |
INSTRUCTIONS

Step 1: Heat oil in a large skillet set over medium-high heat. Add beef strips; stir-fry for 5 minutes or until evenly browned. Transfer to a plate; tent with foil to keep warm
Step 2: Add rice, water, salsa and taco seasoning mix to the skillet. Bring to a boil. Cover and reduce the heat to low; simmer for 5 minutes
Step 3: Remove from heat. Stir in the reserved beef. Let stand, covered, for 5 minutes. Divide the rice mixture evenly between tortillas; sprinkle with cheese. Fold tortillas to enclose filling
Enjoy these restaurant-style tacos in less time than it takes to go to your favourite restaurant.
Variation:
Prepare as directed, substituting 1 lb (500 g) thinly sliced, boneless skinless chicken breast for the beef.
