Step 1: Cook rice according to package directions.
Step 2: Meanwhile, season chicken with paprika, salt and pepper. In large nonstick skillet, heat oil over medium heat; cook chicken for about 3 minutes per side or until browned.
Step 3: Stir in snow peas and garlic; cook for 2 minutes. Add 2 tbsp (30 mL) water; cook for about 1 minute or until chicken is cooked through and snow peas are tender-crisp.
Step 4: Stir in rice; cook for about 2 minutes or until heated through. Serve with lemon wedges.
- If desired, add green onions and chopped radishes to this dish for extra spring vegetables, or substitute asparagus for snow peas.
- This dish is also delicious with shrimp.
- If you like, add 1 chopped cured chorizo sausage for smoky flavour.
