WHAT YOU'LL NEED

Minute Rice® instant white rice | ||
2 cups (500 mL) | ||
3 tbsp (45 mL) | butter | |
2 tbsp (30 mL) | olive oil | |
1 | medium onion, thinly sliced | |
2 | cloves garlic, minced | |
2 cans (10 fl oz/284 mL each) | chicken broth | |
½ cup (125 mL) | milk | |
1 bunch (260 g) | asparagus, trimmed, cut into 2-in. pieces | |
½ tsp (2.5 mL) | each salt and black pepper | |
1/3 cup (75 mL) | 100% Parmesan grated cheese, divided |
INSTRUCTIONS
Step 1: Melt butter with oil in a deep frying pan on medium heat. Add onion and garlic; cook and stir for 2 to 3 minutes or just until tender
Step 2: Stir in Minute Rice®. Add broth, milk and asparagus; mix well. Bring to a boil. Reduce heat to a low; simmer for 5 minutes
Step 3: Add ¼ cup (50 mL) of the Parmesan cheese, salt and pepper; mix well. Sprinkle with remaining Parmesan cheese just before serving
