Minute Rice® Instant Whole Grain Brown Rice | ||
2 cups (500 mL) | ||
1 tbsp (15 mL) | vegetable oil | |
4 | boneless, skinless chicken breasts | |
2 cups (500 mL) | water | |
2 cups (500 mL) | frozen corn kernels | |
1 cup (250 mL) | chunky salsa | |
¼ cup (50 mL) | shredded Cheddar cheese | |
Additional salsa (optional) |
INSTRUCTIONS

Step 1: Heat oil in a large skillet set over medium heat. Add chicken; cover. Cook for 5 to 7 minutes per side or until well-browned and almost cooked through. Transfer chicken to a plate and tent with foil to keep warm
Step 2: Add rice, water, corn and salsa to skillet; mix well. Bring to a boil. Cover and reduce the heat to low; simmer for 10 minutes
Step 3: Nestle the chicken into the rice and sprinkle with cheese. Cover; simmer for an additional 5 minutes or until cheese is melted and chicken is fully cooked. Serve with additional salsa on the side (if using)
