|cooked Minute Rice® instant rice|
|1½ cups (375 mL)|
|¼ cup (50 mL)|
Italian salad dressing
|1 lb (500 g)|
pork tenderloin, cut into thin strips
|1 cup (250 mL)|
thin red pepper strips
|2 cups (500 mL)|
fresh sugar snap peas or snow pea pods
|¾ cup (175 mL)|
diagonally sliced green onions
|2 tbsp (30 mL)|
|1 tsp (5 mL)|
|½ tsp (2.5 mL)|
Step 1: Cook rice as directed on package
Step 2: Meanwhile, heat dressing in a large skillet on medium-high heat. Add meat; cook and stir for 2 minutes. Add peppers and peas; cook for 3 minutes, stirring frequently. Add onions; cook and stir for 1 minute
Step 3: Mix soy sauce, cornstarch and ginger until well blended. Add to meat mixture in skillet; cook for 1 minute or until sauce thickens, stirring frequently. Serve over the rice
Jazz It Up:
For a spicier flavour, add ¼ tsp (1 mL) crushed red pepper to soy sauce mixture before cooking.
