Step 1: Prepare rice according to package directions. Let cool completely. |
Step 2: Whisk together orange zest and juice, oil, vinegar, salt and pepper. |
Step 3: Toss rice with orange vinaigrette. Stir in watercress, chopped orange segments andpomegranate seeds. Top with feta cheese. |
Tips:
- Substitute dried cranberries for pomegranate seeds if desired.
- You can substitute baby spinach or arugula for watercress.
- Serve salad with grilled salmon if desired.
