WHAT YOU'LL NEED

Minute Rice® Instant Whole Grain Brown Rice | ||
2 cups (500 mL) | ||
4 | boneless, skinless chicken breasts | |
¼ cup (50 mL) | reduced fat Italian-style salad dressing | |
2 | cloves garlic, minced | |
1 can (28 oz / 796 mL) | diced tomatoes with juices | |
1 cup (250 mL) | water | |
1 cup (250 mL) | shredded, part-skim Mozzarella cheese | |
1 | tomato, chopped | |
2 tbsp (30 mL) | chopped coriander, basil or parsley |
INSTRUCTIONS

Step 1: Toss the chicken with the dressing and garlic. Set a large skillet over medium-high heat. Add chicken mixture. Cook for 5 minutes per side or until chicken is browned. Transfer chicken to a plate and tent with foil to keep warm
Step 2: Add diced tomatoes with juices and water to skillet. Stir in rice and bring to a boil. Nestle the chicken into the rice. Reduce heat to a low; simmer, uncovered, for 10 minutes. Sprinkle chicken with cheese
Step 3: Cover and simmer for 10 minutes or until an instant read thermometer registers 170°F (77°C) when inserted into the thickest part of the chicken. Sprinkle with fresh tomato and coriander before serving
This supper solution has all your family's favourite flavours and features the great taste and texture of whole grain rice.
Variation:
