WHAT YOU'LL NEED

Minute Rice® instant white rice | ||
2 cups (500 mL) | ||
2 tbsp (30 mL) | butter or margarine | |
2 | medium onions, sliced | |
1 tbsp (15 mL) | curry powder | |
4 | medium bananas, peeled, sliced | |
2 | medium apples, chopped | |
1 can (10 oz/284 mL) | chicken broth | |
1/3 cup (75 mL) | soya sauce | |
1 tsp (5 mL) | ground ginger | |
1 tsp (5 mL) | paprika | |
1/3 tsp (0.5 mL) | ground red pepper | |
4 cups (1 L) | cubed cooked turkey, chicken or ham | |
1 cup (250 mL) | water |
INSTRUCTIONS
Step 1: Melt butter in large fry pan on medium heat. Add onions; cook and stir until onions are tender but not browned. Stir in curry powder; cook and stir 1 minute
Step 2: Add bananas, apples, chicken broth, soya sauce, ginger, paprika, red pepper, turkey and water; mix well. Bring to boil
Step 3: Stir in rice; cover with lid. Remove from heat; let stand 5 minutes. Stir before serving
Use Your Microwave:
Place butter and onions in 3-quart (3 L) microwaveable casserole dish. Microwave, uncovered, on HIGH 2 to 3 minutes or until onions are tender. Stir in all remaining ingredients except rice. Microwave, covered, on HIGH 8 minutes or until water comes to boil, stirring after 4 minutes. Stir in rice; cover. Let stand 5 minutes. Stir before serving.
Creative Leftovers:
This is a great use for leftover cooked turkey.
Apple Varieties:
Look for apples that are firm and well colored with smooth, blemish-free skins. Choose the variety that best suits your needs. All-purpose apples for both eating raw and cooking uses include Cortland, Granny Smith, Jonathan, Fuji, Gravenstein, Empire, Jonagold, McIntosh, Pippin, Spy and Winesap. Best snacking apples are Gala, Golden Delicious and Red Delicious. When cooking, use Rhode Island Greening, Rome Beauty or York Imperial.
