WHAT YOU'LL NEED

Minute Rice® Instant White Rice | ||
2 cups (500 mL) | ||
2 tbsp (30 mL) | olive oil | |
1 | onion, finely chopped | |
2 cups (500 mL) | chicken broth | |
½ lb (250 g) | fresh asparagus, cut into 2-inch (5 cm) lengths | |
2 tbsp (30 mL) | light cream cheese | |
1 tbsp (15 mL) | finely grated lemon zest | |
2 tbsp (30 mL) | lemon juice |
INSTRUCTIONS

Step 1: Heat oil in a large skillet set over medium heat. Add onions; cook, stirring frequently, for 2 minutes or until tender
Step 2: Stir in rice and broth. Bring to a boil. Scatter asparagus over rice. Cover and reduce the heat to low; simmer for 5 minutes
Step 3: Add cream cheese, lemon zest and lemon juice; stir until well combined. Let it stand covered for 5 minutes
This elegant one dish dinner makes entertaining easy, even when presented with unexpected guests.
Serving Suggestion:
Sprinkle with freshly grated Parmesan cheese and freshly ground black pepper for a traditional garnish.
Variations:
Stir in 4 oz (125 g) thinly sliced smoked salmon with the cream cheese. Substitute ½ cup (125 mL) dry white wine for an equal amount of broth called for above.
