WHAT YOU'LL NEED

Minute Rice® Instant White Rice | ||
1 cup (250 mL) | ||
1 tsp (5 mL) | vegetable oil | |
½ lb (250 g) | boneless, skinless chicken breast, cubed | |
1 tbsp (15 mL) | dried Italian seasoning | |
4 cups (1 L) | chicken broth | |
2 cups (500 mL) | assorted chopped vegetables (such as carrots, celery, broccoli and red pepper) | |
2 tbsp (30 mL) | chopped fresh parsley |
INSTRUCTIONS

Step 1: Heat oil in a large saucepan set over medium-high heat. Add chicken and Italian seasoning; cook for 5 minutes or until browned
Step 2: Add broth and vegetables. Bring to a boil. Cover and reduce the heat to a low. Simmer for 5 minutes. Stir in rice. Cover and simmer for an additional 5 minutes
Step 3: Remove from heat. Let it stand covered for 5 minutes. Stir in parsley
This hearty soup is a meal in a bowl.
Substitution:
Use 2 cups (500 mL) thawed, frozen mixed vegetables instead of the fresh vegetables.
Watch the salt:
Use sodium-reduced chicken broth instead of regular.
