WHAT YOU'LL NEED

Minute Rice® Instant White Rice | ||
1 ½ cups (375 mL) | ||
3 cups (750 mL) | frozen California-style vegetable blend | |
¼ cup (50 mL) | water | |
½ lb (250 g) | flaked imitation crab (surimi) | |
1 tbsp (15 mL) | butter or margarine | |
¼ tsp (1 mL) | garlic powder | |
½ cup (125 mL) | grated Parmesan cheese | |
2 ½ cups (625 mL) | 10 % cream (half & half) |
INSTRUCTIONS
Step 1: Combine vegetables and water in a medium saucepan set over medium-high heat. Bring mixture to a boil, stirring occasionally. Reduce heat; cover and steam-cook vegetables for 3 minutes
Step 2: Add cream, surimi, butter and garlic powder; and bring to a boil. Stir in rice and Parmesan. Cover and reduce heat to low; simmer for 5 minutes
Step 3: Remove from heat. Let it stand covered for 5 minutes
This sweet and creamy rice dish will satisfy seafood lovers.
Substitutions:
Use any frozen vegetable blend you have on hand. Fresh, cooked crabmeat, shrimp or scallops can be substituted for the imitation crab.
