shredded lettuce |

medium tomato, chopped |

1/3 cup (75 mL) |
light sour cream |
INSTRUCTIONS
Step 1: Brown meat in a large skillet on medium-high heat; drain. Add salsa and green peppers; mix well. Bring to boil. Stir in rice; cover. Reduce heat to low; simmer for 5 minutes. |
Step 2: Spread beans evenly down centres of tortillas; top evenly with the meat mixture, cheese, lettuce and tomatoes. |
Step 3: Fold in opposite sides of each tortilla, then roll up burrito-style. Serve with sour cream. |
