1 cup (250 mL) | cut-up asparagus spears (1-inch), cooked, cooled | |
¾ cup (175 mL) | salad dressing | |
1 tbsp (15 mL) | each: dijon mustard and chopped fresh parsley | |
Grated peel and juice from 1 medium lemon |
INSTRUCTIONS
Step 1: Toss Minute Rice® with tomatoes and asparagus in a large bowl
Step 2: Combine remaining ingredients. Add to rice mixture; mix lightly
Step 3: Serve immediately. Or, cover and refrigerate until ready to serve
