WHAT YOU'LL NEED

8 oz. (225 g) | boneless skinless chicken breasts, cut into bite-size pieces | |
8 oz. (225 g) | spicy Italian or smoked sausages, sliced | |
1 | medium onion, chopped | |
2 | cloves garlic, minced | |
1 can (19 fl oz/540 mL) | stewed tomatoes, undrained | |
1 can (10 fl oz/284 mL) | chicken broth | |
1 | medium green pepper, chopped | |
12 | medium cleaned shrimp | |
½ tsp (2.5 mL) | turmeric | |
½ cup (125 mL) | frozen peas | |
3 tbsp (45 mL) | freshly squeezed lemon juice | |
2 tbsp (30 mL) | chopped fresh parsley |
INSTRUCTIONS
Step 1: Combine chicken, sausage, onions and garlic in a large microwaveable casserole dish. Microwave, uncovered, on HIGH for 10 minutes, stirring every 3 minutes
Step 2: Add tomatoes, chicken broth, peppers, shrimp and turmeric; stir. Cover and microwave for 6 minutes
Step 3: Stir in Minute Rice® and peas; cover. Let stand for 10 minutes. Drizzle with lemon juice; sprinkle with parsley
