WHAT YOU'LL NEED
INSTRUCTIONS

Step 1: Preheat oven to 425°F (220°C). Meanwhile, in large skillet, heat olive oil over medium-high heat; cook ground beef and Tex-Mex seasoning, stirring occasionally, for 6 to 8 minutes or until beef is browned and cooked through. Drain fat. Stir in black beans and 2 tbsp (30 mL) water; cook for 5 minutes or until water evaporates. |
Step 2: Transfer to greased 11- x 7-inch (28 x 18 cm) baking dish. Layer corn, rice, salsa and cheese over beef mixture. |
Step 3: Bake for 20 to 25 minutes or until cheese is melted and casserole is heated through.Garnish with green onions. |
Tips:
- Make-ahead: Assemble the casserole the night before or in the morning for a stress-free mealtime.
- Omit beef and add Tex-Mex seasoning to black bean mixture for a vegetarian option.
