WHAT YOU'LL NEED

Minute Rice® Premium Long Grain White Rice | ||
2 cups (500 mL) | ||
1 cup (250 mL) | frozen peas, thawed | |
1 cup (250 mL) | cubed cooked ham | |
¼ cup (60 mL) | each prepared basil pesto, chopped sun-dried tomatoes and grated Parmesan cheese | |
2 | large tomatoes, sliced | |
1 tbsp (15 mL) | extra-virgin olive oil | |
salt and pepper | ||
toasted pine nuts (optional) | ||
lemon rind (optional) | ||
Parmesan cheese (optional) |
INSTRUCTIONS

Step 1: Prepare rice according to package directions. Toss hot rice with the peas, ham, pesto, sun-dried tomatoes and Parmesan cheese until well combined
Step 2: Divide the tomato slices between four serving plates. Drizzle with olive oil and season with salt and pepper
Step 3: Spoon equal amounts of the rice mixture onto each plate. Garnish with toasted pine nuts, lemon rind and Parmesan (if using). Serve immediately or at room temperature
